Mustard is an annual herb cultivated as oil seed crop or as vegetable or as fodder, of which, 3 species are known for its condiment value. They are pale yellow or white mustard (Brassica hirta), brown mustard (Brassica juncea) and black mustard (Brassica nigra).

The major processed products are mustard powder used in the manufacture of mayonnaise, dried or dehydrated mustard leaves, whole mustard seeds etc.

Whole mustard is used as a flavouring agent in Indian cooking, whereas ground mustard provides flavour and consistency in Bengali fish curries. Mustard flour has preservative and antioxidant properties in addition to providing flavour and colour.

Mustard seeds are a very good source of selenium and omega-3 fatty acids. They are also a good source of phosphorus, magnesium, manganese, dietary fiber, iron, calcium, protein, niacin and zinc.

In India, mustard is known both as oil seed as well as spice. Internationally, however, it is more popular as a spice. Mustard seeds are sold either whole or as a ground powder.

Black Mustard seeds are most commonly used by the oil industry & the animal feed industry due to its distinct flavour. It is a primary ingredient used in most of the Indian cuisine. Its seeds and leaves have immense medicinal properties. Black mustard seed is used for inducing vomiting, relieving water retention (edema) by increasing urine production, and increasing appetite.

Yellow Mustard seeds are normally used to make oil & sauces. They have a slightly milder taste than Black/Brown Mustard seeds & hence are used to make paste & sauces. These seeds are often used as part of spice rubs for roasting meat, pickling spice mixes. They are used to make homemade mustard. Yellow mustard seeds are a great source of dietary fiber, protein, calcium, iron, zinc, magnesium and phosphorus. Mustard is a great source of magnesium & selenium, these nutrients are useful in curing or alleviating asthma, menopause & migraines.
